I’ve found that when I want my kids to eat certain foods that are super healthy, if they don’t like them the first way they try them, the old adage, “If at first you don’t succeed, try, try, again,” has been important for me to keep in mind. Green beans have been one of those kinds of foods for my kids. And I’ve found that by trying out lots of different recipes over time, the kids get to taste the flavor of the green beans over and over, so they start getting more used to them; and also, we all discover which ways they like them more (and less). It took a bit of time and a variety of different recipes, but eventually we landed on one that worked well for green beans, a green bean casserole with cashew cream and croutons. And we now have a variety of ways that we all tolerate green beans. And broccoli. And mushrooms. I may be a bit of a picky eater, myself. Thankfully, creativity and perseverance has led to a greater variety of healthy foods that my family eats on a daily basis. I think it probably works best to start working on incorporating different recipes that help our kids eat healthy foods early, but it’s never too late to start.
