Chocolate Chip Cookies
*Makes 16 cookies
Ingredients
½ C date sugar
¾ C oat flour (or whole wheat flour)
¼ tsp baking soda
¼ tsp salt
⅓ C tahini (or you can use whatever nut or seed butter you prefer)
1 flax egg: 1 TBSP flax meal + 3 TBSP water
½ tsp vanilla (can omit)
½ (10 oz) package of chocolate chips (use 5 oz)
1 to 2 ½ TBSP plant milk or water
Instructions
Preheat the oven to 375 or air fryer to 425.
Add all dry ingredients except chocolate chips (mix: date sugar, flour, baking soda, salt) in a large bowl and stir to mix well. Add wet ingredients (tahini, flax egg, vanilla, 1 TBSP plant milk or water) and mix well by stirring. Add the chocolate chips and stir well. Pick up a bit of the dough and see if you can press it into a ball in your hands. If it is a tad too dry to do this well, add another ½ TBSP of plant milk or water, and stir well. Form into 16 balls and press them a little (maybe ½” thick).
Bake in the oven at 375 for 12 minutes or in the air fryer at 425 for 6 minutes. Let cool a little before eating, enjoy!
